  1. Make ready 2 chicken breasts
  2. Take Breadcrumbs - I had packet crumbs in the pantry
  3. Take Small dish of milk
  4. Make ready Small dish of plain flour
  5. Make ready Olive oil to shallow pan fry
Instructions to make Smashed chicken:
  1. Flatten chicken breasts with a rolling pin or meat tenderiser- they need to be about 1cm thick to cook quickly. If they are large cut in half before flattening.
  2. Set out dishes of flour, milk,breadcrumbs. Start by pressing each piece of flattened chicken firmly into the flour on both sides.
  3. Dip one piece of chicken into milk on both sides and straight into the breadcrumbs and press firmly. Remove to a plate and repeat until all chicken pieces are coated.
  4. Heat some oil (I use olive oil) in a frying pan and when hot cook the chicken in batches, approximately 4 minutes per side. Check one to see the the chicken in cooked through.
  5. Serve immediately with salad of your choice.
