Prepare 2 cups whole wheat flour

Get 8 bati
Prepare 1 cup ghee
Get 10-12 raisins
Make ready 8-10 cashews
Get 8-10 almonds
Prepare 1/2 tsp cardamom powder
Take Sugar bura according to your taste
Make ready For chutney
Prepare 1 inch ginger
Prepare leaves Fistful of finely chopped coriander
Prepare 1/2 tsp black salt
Make ready 3-4 green chilies
Get 1 cup peanuts (roasted)
Take to taste Salt
Take 1 tsp cumin seeds
Prepare 1 tbsp Lemon juice
After pressure cooker start steaming lower the heat to medium and cook for about eight minutes. Turn off the heat; wait until all the steam has escaped before opening the cooker. Wash all the dals, and put into the pressure cooker. Remove from oven or Tawa and cool them.
Steps to make Dal bati in pressure cooker or kadhai:
First of all add ghee into whole wheat flour and mix well, now add salt, soda and hand rubbed carom seeds mix well again. Gradually add water and knead dough. Dough should not be too soft nor too hard. Keep aside.
In a mixture jar mix all ingredients of chutney and grind it in a smooth paste. Add some water if you want.

After 15 minutes, make large (medium tomato sized) balls of dough. Heat a pressure cooker or kadhai (you can use any heavy bottomed pan also) on high flame. Turn down flame on medium heat and pour 4-5 tsp ghee in pan and grease allover the pan. Now place batis in it and cover the pan. If you use pressure cooker remove the ring and whistle, and close the lid.
After 5 minutes flip over all the batis. Repeat this process in every 2-5 minutes. Apply ghee in between. Roast batis on all sides. After 15-20 minutes 1 batch of bati is ready. Remove the batis from pan, dipped in ghee and store in a box. Now place another batch and repeat the same process again.
For laddu- take prepared batis and grate it with grater. Some parts are not easy to grate so put it in mixture jar and grind it in a smooth powder. Now add sugar bura, cardamom powder and dry fruit in this powder. Gradually pour melted ghee in it and make laddu.
Now all things are ready to serve. Serve hot and enjoy. You can complete this meal with masala chaanch.
Wash all the dals, and put into the pressure cooker. Remove from oven or Tawa and cool them. Make a fine powder from the cooled chapatis or bati in a mixer. Melt remaining ghee in a kadhai, Add chapati powder and. Dal bati is a traditional dish from the state of Rajasthan.
