  1. Sieve Besan well. Now add Dahi and water. Mix well.
  2. Add Ginger and Chilli paste, turmeric, salt. Mix thoroughly. Again sieve this mixture to get the smooth batter.
  3. Keep cooker. Add water. And place a stand. Now keep the pot on the stand and cover it so that water doesn't go inside. Cover the lid and cook till 5 whistles. It depends on cooker too. So needs 6 or 7 whistles.
  4. One way you check that your batter is ready is that it doesn't drip from your spoon. If it drops you can give another one or 2 whistles.
  5. By the time batter is getting ready, you can clean and grease the platform or thali where you can spread the batter.
  6. Once batter is done, spread the batter quickly before it gets cool otherwise you will not be able to make thin sheets. Here I have spread red Chilli chutney and green chutney to make it more spicy and tasty. Also I have spread coconut powder.
  7. After 10 mins cut the sheets in required size and roll them.
  8. Keep it a plate and keep one kadai for Tempering. Add oil and mustard seeds. When it starts spultering add sesame seeds and curry.. put it on khandvi.
  9. Garnish them with coconut powder and green coriander leaves. Serve them with chutney of your choice.
