The ingredients needed to make Papaya Salad:
  1. Take 1 1/2 cup green papaya, julienned and soaked in cold water to keep firm
  2. Make ready 1 cup cherry tomatoes, cut into halves
  3. Get 1/4 cup roasted peanuts
  4. Prepare Cilantro leaves (optional)
  5. Prepare Dressing
  6. Prepare 2 gloves garlic, minced
  7. Get 1-2 green or red chillies
  8. Make ready 4 tbsp palm sugar, diced
  9. Take 2 tbsp dried shrimps, diced
  10. Make ready 6 tbsp fresh lime juice
  11. Take 2 1/2 tbsp tamarind juice
  12. Prepare 4 tbsp fish sauce
Steps to make Papaya Salad:
  1. In a mortar and pestle, pound the garlic and chillies until the garlic is slightly bruised. Then add the palm sugar, dried shrimp and half of the peanuts. Mash all together.
  2. Add the lime juice, tamarind juice and fish sauce. By this time make sure the palm sugar if already dissolved into the dressings.
  3. In a bawl, combine the dressing with the green papaya and tomatoes. Top with the remaining peanuts and some cilantro.
