  1. Preheat oven to 350F / 180C. Line a cake pan with parchment paper and coat some butter on it.
  2. Take a bowl and sift 1½ cup maida, 2 tsp baking soda, ½ tsp baking powder and a pinch of salt in it. Keep aside.
  3. Take another big bowl and add ½ cup butter, ¼ cup oil and ½ cup sugar in it. Mix till fluffy - for about 3 minutes.
  4. Beat 1 cup thick curd separately for 1 minute till creamy.
  5. Add the beaten curd to the butter, oil & sugar mix. Mix well.
  6. Add 1 tsp vanilla essence to wet ingredients. Mix well for a minute or so.
  7. Add 1 tsp vanilla essence to wet ingredients. Fold them together with a spatula.
  8. Mix dry ingredients (maida, baking soda, baking powder and salt mix) into wet ingredients in 3 batches.
  9. Pour the batter in the lined pan. Level it out with a spreading knife.
  10. Tap the cake tin on counter few times and put it in the oven.
  11. Bake it for 30-40 minutes, till the toothpick comes out clean from the centre.
