Instructions to make Mini Uttapam Sandwich:
  1. Soak rice and urad dal separately overnight, and grind them to a smooth paste (grind separately)by adding water. Mix the both the paste well and keep it for at least 7-8 hours for fermentation. When you are ready to make the Uttapams, add pinch of salt again give it a nice mix and keep it aside.
  2. For potato stuffing, heat oil in a pan, add cumin seeds when it starts to splutter, add the chopped onion fry it till translucent, add green chilies, capsicum, tomatoes & salt, mix everything well until tomatoes becomes soft & mushy, lower the flame add coriander powder, red chilli powder & pav bhaji masala, cook the masala well for 3-4 mins. Now add the boiled and mashed potatoes, coat it well with the masala for 2-3 mins, add lemon juice & chopped coriander leaves, mix it well & keep it aside.
  3. Heat a non-stick tawa, brush little oil, pour the batter & make mini size of 2 uttapams, on a medium flame allow it to cook for 2 mins, now add the potato stuffing on one uttapam, and sprinkle some podi masala/smabhar masala & coriander leaves on the other add few drops of oil on both of them, cook it for 2 mins, flip both the uttapams and cook it for another 2-3 mins from other side and it's done. Put the podi masala side of uttapam over the aloo masala uttapam like sandwich and it's done.
