In a glass jar, add day1 ingredients and stir. - Cover the jar with a cheesecloth or kitchen towel & secure it with a rubber band. - Place the jar in the warmest place in your house. - Feed every 24 hours, day 2 & day 3 ingredients (Don't stir).
In a large pot add day 4 ingredients and, stir. - Boil the mixture over medium heat until the sugar dissolves. - Then turn off the heat and allow the mixture to steep for an hour. - Meanwhile, open the ginger bug jar and strain the ginger bug. Keep that aside.
(After 3 days of feeding you should see small bubbles floating in the jar). - Now strain the ginger syrup, add in the ginger bug and stir. - Pour the mixture into the glass bottles and seal the bottles tightly. - Open the bottle every day to release the excess gas for 2-3 days. - Once the beer is ready and fizzy store that in the refrigerator to prevent further fermentation. - Consume within 1-2 weeks.
Note: The more you feed it, the more real strong ginger taste you will get. - You can also add 3 tbsp lime juice and sliced jalapeño in the ginger bug.
