The ingredients needed to make Aloo Bari Pulao:
Get 2 cup long grain basmati rice, washed, soaked in water for 1 hour,
Prepare 2 amritsari bari, 2 aloo cut into med sized pcs,
Get 4 tbsp mustard oil, 2 med sized onion sliced, 1 tsp garlic paste, 1/2 tsp ginger paste,
Prepare 1/2 tsp haldi powder, 1 tbsp dhania powder, 1/2 tsp red chilli powder, salt to taste,
Make ready 1/2 tsp garam masala powder, 1 tbsp desi ghee,
Instructions to make Aloo Bari Pulao:
Take lil oil in a pan, fry Bari & aloo till light brown, keep aside.
Take a pressure cooker, add oil, heat it.
Add onion, stir fry it till light brown.
Add ginger garlic paste, add lil water also, sauté it for a while.
Add haldi, dhania & red chilli powder, again add lil water, mix it well, cook it till oil has oozed out.
Add salt, give a stir. Now add bari & aloo, stir it for a while.
Now add strained rice, stir fry it until rice grains are separated.
Add desi ghee, give a stir.
Add water accordingly (almost 3 cup), place the lid, give 1 whistle.
Lower the flame now, cook it for 5-10 minutes.
Switch off the flame now, allow it to depressurise.
Take out in a serving dish, garnish it with chopped dhania patta.
Have it with raita, chutney, papad, salad, achar & desi ghee.
