Take 1/2 cup coriander leaves chopped
Instructions to make Veg Dum Hydrabadi biryani:
First soaked the basmati rice for 30 min
Then heat the big vessel add 2.5 to 3 ltr water add 1 tbsp cumin seed,bay leaf,green cardoman, 5-6 black pepper, 3-4 cloves come to boil then add soaked rice in it cook 5-6 min in high flame,60-70 % done rice the strain it water all extra water
Marinate the vegetables, take the bowl add curd,turmeric,red chilli,biryani masala,mint leaves,coriander leaves then beat
Then add some which vegetables as per your choice like potato,french beans,carrot,green peas,cauliflower,green chilli,salt in the same bowl for 20 min
Heat the oil add chooped onion
Then fry the onion till golden and crispy
Heat the big pan add oil then add cumin seed after crackle of cumin seed add chopped onion fry till light brown then half cup curd then add marinate vegetable cook for 2-3 min in high flame then add little water then cook for 15-20 min in medium flame
Take a a top (patila) for first layer add half of cooked vegetables After that add half of the boil rice then topped with mint leaves,coriander leaves fried onion then repeat the same for second layer add remaining cooked veggies then rice mint leaves coriander leaves,fried onion and food colour
Then dum for 25-30 mins in slow flame cover with foil paper then heavy tava on the top
After that dum hydrabadi biryani is ready to serve with raita,salad
You can add panner cubes or soya chunks in marination (optional)
