The ingredients needed to make Koshari:
Prepare 2 tbsp oil
Get 1 medium carrot finely diced
Make ready 1 onion finely diced
Make ready 4 cm piece fresh ginger
Get 3 gloves, crushed
Prepare 1 small red chilli finely diced
Prepare 2 tbs tomato puree
Take 2 tsp baharat spice
Prepare 400 g tin chopped tomatoes
Make ready 20 g brown lentils (I used red in this recipe)
Take 400 g tin chickpeas
Get 30 g organic brown rice
Make ready 1 ltr vegetable stock
Take 30 g vermichelli pasta, bashed into small pieces
Prepare Handful fresh coriander leaves, chopped
Make ready sprinkle of parsley, chopped
Make ready to taste salt and black pepper
Get 1 lemon, zested (optional)
Instructions to make Koshari:
Heat the oil in a large saucepan and saute the onion and carrot for 10 minutes until slightly brown. Add the ginger, chilli and garlic and cook for a further 2 minutes.
Add the baharat spice, stir and cook for 1 minute. Add the tomato puree and tomatoes and stir well.
Add the chickpeas, lentils, rice and vegetable stock and simmer on a low heat for half an hour. Add the pasta and season to taste. cook until the pasta is soft.
Serve with crusty bread, a sprinkling of coriander, parsley and a grate of lemon.
