Line a baking tray with baking paper. Crisp, golden parcels filled with chickpeas, potatoes and cheese, with a touch of warm Eastern spices, make a really tasty and satisfying main dish. Instructions to make Chicken and feta pastry parcels:
  1. Cook chicken for a few minutes in olive oil until it turns white and releases any water. Drain water and put in a bowl. Now preheat the oven to 200. Add passata, crumbled feta and oregano to chicken
  2. Mix well and set a side. Roll out the pastry. Divide into four parts. Prick with a fork and glaze with egg. Add the chicken mixture on top
  3. Roll up each parcel. Seal ends and glaze with egg. Prick with a fork or cocktail stick. Bake for about 20 mins until golden brown. Serve with a nice salad

Pair them with a tomato or mixed salad, and you have a complete meal. Served cold, they would also make a great addition to a packed lunch or picnic. Spinach and feta parcels are easy to make and take no time at all to cook. Serve with fresh crisp salad leaves for dinner. Crumble the feta and mix with the spinach in a bowl.
