  1. Wash and drain basmati rice.
  2. Wash, peel off and grate Carrot.
  3. Heat ghee in pressure cooker and put green cardamom.
  4. Add rice and fry for 2 minutes.
  5. Add grated carrot and mix well.
  6. Add 1 and 1/2 cup water in cooker, close the lid and cook for 1 whistle.
  7. In a pan take sugar and 1/2 cup water.
  8. Make sugar syrup and add raisins and orange food colour.
  9. After cooling open the lid of cooker and add sugar syrup.
  10. Mix well, close the lid again and cook for another whistle.
  11. Switch off the flame and after cooling garnish zarda pulao with dry fruits and tutti fruitti.
