The ingredients needed to make Moukhabbas:
  1. Prepare 1 medium-sized eggplant 350g
  2. Prepare 150 g Good quality plain yogurt
  3. Prepare 100 g Minced meat
  4. Prepare 1/4 bunch Chopped parsley
  5. Prepare 1 clove crushed garlic
Steps to make Moukhabbas:
  1. Cook the eggplant on direct fire (cooker stove or charcoal grill) just like when preparing babaghannouj then peel it off, chop finely or mince, and put it in a big bowl
  2. Add the yogurt, the garlic and a pinch of salt then mix well
  3. Spread the mixture in a serving plate and then put the parsley on the surface
  4. Pan-cook the minced meat and do not forget to season with salt and pepper (or Aleppo seven-spice mix if you have)
  5. Garnish with tomatoes slices, lettuce leaves and/or green pepper and SERVE
  6. Eat by scooping up with pitta bread (lavash or any other flat bread is good as well)
